Gooseberry & Elderflower Extra Jam
The heady scent of elderflowers combines beautifully with the sharp tang gooseberries to make a quintessential British jam. Both Elderflowers are Gooseberries are ready for picking at the same time in Britain, making this flavour combination one of natures best. Sugar preserves of various fruits were termed ‘jam’ in the 17th and 18th centuries. Fruits and sugar were boiled together to make a long-keeping preserve. Jams were used on The East India Company voyages as it preserved Vitamin C, which prevented scurvy amongst the sailors.
