Greengage Extra Jam
Greengages make excellent juicy and aromatic jam, with its vibrant yellow green colour it makes a lively addition to the table. Sugar preserves of various fruits were termed ‘jam’ in the 17th and 18th centuries. Fruits and sugar were boiled together and sealed to give a long-keeping preserve. Jams were used on The East India Company voyages as they preserved Vitamin C, which was known to prevent scurvy; sailors were healthier with the introduction of jam on board ships.
